My friends picked up a flat of tomatoes for me last weekend. We love tomatoes but it became clear very quickly that we couldn't eat enough of them fresh so I decided to make salsa. Here they are all chopped up and lightly salted with pickling salt. They are raised up on a tray so they can drain most of their liquids out.

Have you ever peeled tomatoes? It is quite a interesting process. Bring a pot of water to a boil and put in some tomatoes. After 1-2 minutes lift them out and drop them into a sink full of cold water and BAM the peels will slide right off in your hands. Slippery though so hang on to them.

I ended up with a dozen jars of salsa full of tomatoes, onions, jalepenos and sweet peppers. There is also a healthy dose of cumin thrown in. Each jar gets about 3 tablespoons of lime juice to help with the acidity so the food stays safe to eat after a full processing time.
