Salmon is so good and so good for you. Of course barbecued is best in my opinion because everything taste better that way but this time of year I am not going out back and neither is anyone else.
This can be quite messy so make sure you cover your pan well with tin foil. Preheat oven to 400 degrees. Fish likes it hot.
Spread a layer of mayonnaise over the salmon covering evenly about 1/4 inch thick. Sprinkle with salt and pepper.
Seems weird I know but now your spread an even layer of brown sugar over top of the mayo and press it down gently to make it stick. Try to get the edges too.
Pop this into your hot, hot oven and bake it for 10 minutes per 1 inch thickness...thicker than that...bake it longer. Look at how golden brown and yummy that looks. It smells amazing.
See that black burnt sugar on the tin foil? Now aren't you happy you listened to me and covered your pan. The only way I have found to get that off your pan is to use a jackhammer. It does destroy your pan though.
