This is a great hearty breakfast for the morning after a prime rib dinner.
Combine cut potatoes, left over prime rib, onion, a red pepper and salt and pepper in the pan. I also added in leftover onion and pepper from the night before.
I turn all the cut edges down so they will crisp up nice and brown.
Cover with the lid slightly ajar to let the steam out.
Don't go away and write on your blog or you will burn it. We ate it anyways.
