
First they contain the egg in a circle so it doesn't spread all over the pan. This maintains an even thickness of the white so the edges don't become crisp.
Secondly by keeping the egg in the even circle shape it will now fit perfectly onto that toasted bagel or English muffin you have waiting for it.
You can also use this with scrambled eggs/omelet style if you are not stirring too vigorously. Once again a perfect fit on the baked goods. (No not a jelly doughnut)
I had this big breakfast yesterday to fortify me for my foray into the garden. No that is not all pepper on the eggs, some of it is parsley. Great photo work eh?
