
Basically I seared the veggies in olive oil, added salt and pepper and then doused it with a bit of Maple Syrup. Into a very hot oven for 15-20 minutes. Delish. Sorry I didn't get a photo of them after they were cooked. The guests were about to attack and I forgot to take the final picture.
We had a houseful of guests and it was a big hit. It is surprising how many people have never had the little patty pan squashes. Of course there was asparagus. We eat it about once a week at least. This is what is so great about cooking. You start with one thing and adapt it to what you have on hand whether it is more of something or less.

ReplyDeleteTerrific veggies! I am roasting almost everything nowadays -- partly because it's so delicious, and partly because I'm becoming an increasingly lazy cook and it's so easy!

I love those baby squash. There is nothing better than roasted vegetables. Like the addition of the maple syrup. Was oging to do that with carrots tonight for dinner but DH insisted on cauliflower . . . .

I've always eyed the baby squash in the supermarket but haven't tried them! This recipe may have just changed that. Looks delicious.

Thanks for visiting my blog. It's a great thing isn't it? I come to visit you in return, and there is a lovely roasted vegetable recipe. Have you ever grown the little patty pans? They really grow quickly. One year while still living in the north, I had so many to give away the neighbors would start locking the doors when they saw me coming with my arms full. Come to think of it, maybe it wasn't because of the squash! Oh well.

I think we are all in agreement here that roasting vegetables is the way to go. Beets also roast up to perfection. Like candy.
