ASPARAGUS WITH BALSAMIC AND BASIL

Place asparagus in a large frypan in a small amount of boiling salted water. Cook covered for 3-5 minutes, or until tender. (do not overcook) Drain and put into an ice water bath to cool quickly. Drain and place in a shallow dish.

1 1/2 pounds of asparagus, trimmed
1/4 cup olive oil
1/4 cup olive oil
5 teaspoons balsamic vinegar
1/2 teaspoon salt & pepper
1/2 teaspoon salt & pepper
pinch brown sugar
1/4 cup chopped fresh basil
1/4 cup chopped fresh basil
2 shallots, chopped fine
Place asparagus in a large frypan in a small amount of boiling salted water. Cook covered for 3-5 minutes, or until tender. (do not overcook) Drain and put into an ice water bath to cool quickly. Drain and place in a shallow dish.
In small bowl, combine vinegar, brown sugar and shallots. Gradually whisk in oil, then salt and pinch of pepper. Whisk in basil.
Pour vinaigrette over asparagus, turning gently to coat. Cover and let stand for about 1 hour. Sprinkle lightly with pepper.
Serves 6 (not in my house, lol)

Sounds good! My basil's about 1 1/2" high with four leaves on each plant right now, can't wait for it to grow!

Asparagus is delicious! It grows wild around here, but I can never spot it in the wild, lol. I buy mine at the store. Definitely one of my favorite veggies.
ReplyDeleteAs an adult... I can but assume that my mom was not very good with cooking asparagus. I still can not even get it into my house.
ReplyDeleteThe growing and harvesting has always been so fascinating... maybe...maybe... I'll give this a try...
I will never tire of Asparagus. I have to try this one for sure next time.
