Cheese wine chicken is a family favourite at our house. I found the recipe in the newspaper many years ago when we used to take turns making special dinners with another couple. We always made something new that we hadn't tried before. We ate like grown-ups with cloth napkins and crystal wine glasses. Our kids were put in the garage while we ate...just kidding.
1 cut up chicken, skin removed
1 tin of mushroom soup
1 tin of drained mushrooms
3/4 cup of white dry white wine or chicken stock
1 tablespoon of curry powder (don't worry it doesn't taste like curry in the end)
2 cups of shredded aged cheddar cheese
paprika
Preheat oven to 350 degrees.
Place chicken in a baking pan with sides high enough to contain all the yummyness.
Mix together mushroom soup, mushrooms, wine and curry powder and pour over chicken.
Top with cheese and sprinkle with paprika.
Bake for at least 45 minutes or until chicken is cooked through and the cheese is really nicely browned.
Make sure you are the one who takes it out of the oven so you can pick the crisp cheese from around the edge of the pan. Don't tell my family I do this.
